How it's made

Cold process, six weeks, no shortcuts.

01

Poured

Oils and lye meet at 38 °C and go into a 20 lb wooden mould. Colour is clay and charcoal, never dye.

02

Cut

A day later the loaf is firm enough to cut by hand with a wire. The edges stay irregular because a hand cut them.

03

Cured

Six weeks on cedar racks while the water leaves. A cured bar lasts twice as long in the dish.
